It’s SO good.” With him being a self-proclaimed “master taste tester,” his opinion has got to count for something, right?

Appetizer and Side Dish Ideas

  • Stuffed button mushrooms (baked/grilled app)
  • Cracker toppers (baked/grilled app)
  • Veggie and cracker dip (fresh, app/side)
  • Stuffed large portobello mushrooms (baked/grilled side dish)
  • Bread topping toasted in BBQ or oven (like bruschetta)
  • Stuffed squash (halved, hollowed & baked/grilled)

Preparation

This is a VERY easy dish to make. Literally, you chop and grate the first few ingredients, throw the rest in and mix it well. The time-consuming part comes with washing and stuffing mushrooms. If you’re stuffing large portobello mushrooms it takes no time at all. If you’re doing the small, bite-sized ones for an appetizer, it will take more time.

In the ingredients are “mushroom stems”. To remove the stems, apply a little bit of side pressure and they usually pop off super easy. If using large portobello mushrooms, I will sometimes take a knife and hollow out a larger pit where the stem was to accommodate more filling. If you plan to make an omelette anytime soon, the stems can also be saved for that if you have extra.

Seasonings

Guilty as charged. My mom got me onto Clubhouse spice mixes because they have amazing flavour and they’re all gluten-free. I, unfortunately, missed seeing “sugar” on the ingredient list of the Clubhouse Vegetable spice mix. At this stage of my life, I’m less picky with being 100% sugar-free. When I was trying to treat a pituitary tumour with a sugar-free diet it was a different story. Now, I will eat a very small quantity in something like this, although I’m well aware it’s not ideal for anyone’s health. I have tried to come up with my own spice mix but humbly admit I just can’t get as good of flavour as Clubhouse. This is about as “cheater” of a dish as you’ll get on our site.

Modify

This is such an easy dish to modify if you have a specific diet you’re following. The base is spinach and carrot, and everything else is just flavour enhancers. If you cannot do mayo use mashed avocado instead. Get creative and please let us know your and your guest’s thoughts!

Ingredients
  

  • 1 cup spinach chopped
  • 1 cup carrot grated small
  • ½ cup red onion finely diced
  • ½ cup walnuts chopped
  • ½ cup feta crumbly, goat and/or sheep
  • ½ cup mayo
  • cup mushroom stems chopped
  • cup bacon bits
  • 1 tbsp Clubhouse Vegetable spice mix
  • 1 tsp Dijon mustard
  • Kosher salt and pepper to taste
  • 50 button mushrooms or crackers

Equipment

  • BBQ or oven

Method
 

  1. Chop all ingredients, mix together in a medium sized bowl
  2. Place on top of crackers like Triscuits, bread with an oiled bottom, or stuff mushrooms. Bake at 375°F or place over medium heat in the BBQ for approximately 20 minutes
  3. Immediately enjoy, right away!

Homemade Chocolate Chips, Double Boiler Method

If you’re like me, you love chocolate chips but can’t eat anything that’s pre-prepared without compromising your monthly rent or mortgage payment (okay, possibly an exaggeration). Historically, I’ve used 100% pure Baker’s chocolate in place of chips, which Tim and I don’t mind one bit, but it’s not something most kids would crave. This recipe is whole-food, plant-based and paleo. It uses real, pure maple syrup to give the chips a bit of sweetness, but keeps it healthy and whole.

Sugar Free Chocolate Chips

With just 3 ingredients, these refined sugar-free, dairy-free, gluten free, whole-food, plant-based…you name it… chocolate chips couldn’t get better!
Prep Time 30 minutes
Servings: 1 cups

Ingredients
  

  • 4 oz 100% Pure Baker’s Chocolate
  • 1/3 cup Pure maple syrup
  • 1/8 tsp Himalayan sea salt

Equipment

  • Double Boiler

Method
 

  1. Prepare X2 cookie sheets by lining them with parchment paper or silicone baking mats
  2. Using a double-boiler method (see below), melt chocolate
  3. Once 80% of the chocolate is melted add the maple syrup and salt
  4. Stir until it’s thick (the maple syrup will evaporate)
  5. Turn the burner off but keep the pots as they are
  6. Transfer 1/3 chocolate mix into an icing dispenser, while the other 2/3 stay warm in the pot
  7. The chocolate mix will be hot, so you may want to wear thin gloves to protect your hands, or just fold the icing bag over to create an extra layer
  8. Work quickly to dollop the chocolate in small dots onto the cookie sheet in rows until the icing dispenser is empty, then refill.
  9. Transfer the baking sheet to the freezer so that the individual chocolate chips will free. Once frozen, they can be combined into a freezer-safe container and stored in the freezer for up to 3 months.

Double Boiler Method:

The double boiler method ensures you will not burn the chocolate, which is important since it’s not getting mixed with an oil in this recipe. When the water in the bottom pot starts to boil, the steam from the bottom pot will heat the top pot, melting the chocolate. Easy peasy. If you don’t have an official double boiler, just use a metal bowl or saucepan for the top pot, ensuring the bottom of it doesn’t make contact with the water, or it will burn.

The “cheater” double boiler method uses a steel bowl or small sauce pan as the top pot.

Whether you turn them into a brownie, cake or cupcake, they’re filling, rich in flavour, soft and nearly every diet can eat them. They are so easy to prepare. All you need are some measuring cups, spoons, the ingredients and a blender.

You can sprinkle any type of nut on the top and they get beautifully roasted while baking. If you prefer mixing them into your batter, that’s an option, too. In the latter case I’d recommend roasting them dry for 10-15 minutes in your oven to bring out more flavour.

Years ago, when I used to use canned beans, I accidentally opened up a can of kidney beans instead of black beans. Not wanting to waste, I used them in the brownies. You know what, they worked just as well. I still called them black bean brownies though because I didn’t think “kidney bean brownies” sounded quite as appetizing. But they were.

At our wedding, 40 out of 180 people had some type of a food restriction: gluten free, dairy free, diabetes, nut allergies or vegetarian. The cost to have a “regular” wedding cake done up was surprising enough let alone one to accommodate all the diets. So, as you may guess from the photos, I shamelessly made and served the tried and true Black Bean Brownie Cake. We made it into a 2-layered cake using 9″ circular pans, smothering some chocolate avocado pudding between and all over them like icing. I “intended” to put some pomegranate seeds around it or on top in the shape of a heart, but honestly I can’t imagine how I thought I’d have time for that. Instead, we just plopped, I mean “delicately set”, a cute bride and groom ornament that my grandparents used on their wedding cake in the middle and called it good. And that it was. Everyone with food issues appreciated a tasty and safe cake, or cupcake, to eat. One guest said it was “very rich”. Maybe I should have gone with a vanilla icing for them. Regardless, rich is what I like because I’m completely satisfied after one helping then.

Black Bean Brownies

Ingredients
  

  • ¾ cups dried black beans or 1¾ cups cooked / 119 oz can drained & rinsed well
  • 4 eggs
  • 3 tbsp oil Avocado, coconut, extra virgin olive etc.
  • 1 tsp vanilla
  • ¾ cup pure honey
  • ¼ tsp kosher salt
  • ¾ tsp baking powder
  • 1 tsp guar gum Substitute with xanthan gum or 1.5 tsp of another starch
  • ¾ cup cocoa powder The better quality, the better the flavour
Optional Toppings:
  • ½ cup Nuts Walnut, pecan or peanut
  • ½ cup Chocolate chips Homemade, 100% pure Bakers chocolate cut up, or chip of your choice

Equipment

  • Oven

Method
 

  1. Preheat oven to 350°F
  2. In a blender or food processor, add and blend until smooth the black beans, eggs, oil and vanilla.
  3. Slowly add and blend until smooth the honey and salt
  4. Sift the baking powder, guar gum and coco into a bowl and mix.
  5. Add dry ingredients into the blender and blend again
  6. You may need to scrape the sides of the blender down with a spatula
  7. There are plenty of baking options. Pour your batter into whichever option you prefer.
    1. Line a 9X9 baking pan with parchment paper for a brownie cake. Bake for approx. 45 min or until toothpick comes out clean.
    2. Line a 9X13 baking pan with parchment paper for for a traditional, flatter brownie. Bake for approx. 40 min or until toothpick comes out clean.
    3. Line X2, 9″ round baking pans with parchment paper and make a X2 layered cake with chocolate avocado pudding icing. We did this for our “special diet” wedding cake and it went over very well. Bake for approx. 40 min or until toothpick comes out clean.
    4. Silicone muffin/cupcake sheaths work great too. Bake for approx. 30 min or until toothpick comes out clean.
  8. Once cooled, sore in an airtight container. The flavour and moisture levels tend to get better as the brownies age. For best flavour, wait 24 hours before consuming.
  9. Serve plain or with your favourite toppings: berries, coconut whipped cream, ice cream, etc.

Upon the discovery of baked oatmeal, it quickly became one of our go-to breakfasts. It’s outright delicious, easy to make, cheap and the leftovers are just as good. It doesn’t get better than that. But you don’t have to reserve it for breakfast only… Oatmeal
