SOOO Delicious Appetizer Spread

Whether you’re looking to stuff mushrooms, top crackers or create a delicious side dish, everyone will rave about this one! Tim’s comment on it was “the photos just don’t do this one justice. It’s SO good.” With him being a self-proclaimed “master taste tester,” his opinion has got to count for something, right?

Appetizer and Side Dish Ideas

  • Stuffed button mushrooms (baked/grilled app)
  • Cracker toppers (baked/grilled app)
  • Veggie and cracker dip (fresh, app/side)
  • Stuffed large portobello mushrooms (baked/grilled side dish)
  • Bread topping toasted in BBQ or oven (like bruschetta)
  • Stuffed squash (halved, hollowed & baked/grilled)

Preparation

This is a VERY easy dish to make. Literally, you chop and grate the first few ingredients, throw the rest in and mix it well. The time-consuming part comes with washing and stuffing mushrooms. If you’re stuffing large portobello mushrooms it takes no time at all. If you’re doing the small, bite-sized ones for an appetizer, it will take more time.

In the ingredients are “mushroom stems”. To remove the stems, apply a little bit of side pressure and they usually pop off super easy. If using large portobello mushrooms, I will sometimes take a knife and hollow out a larger pit where the stem was to accommodate more filling. If you plan to make an omelette anytime soon, the stems can also be saved for that if you have extra.

Seasonings

Guilty as charged. My mom got me onto Clubhouse spice mixes because they have amazing flavour and they’re all gluten-free. I, unfortunately, missed seeing “sugar” on the ingredient list of the Clubhouse Vegetable spice mix. At this stage of my life, I’m less picky with being 100% sugar-free. When I was trying to treat a pituitary tumour with a sugar-free diet it was a different story. Now, I will eat a very small quantity in something like this, although I’m well aware it’s not ideal for anyone’s health. I have tried to come up with my own spice mix but humbly admit I just can’t get as good of flavour as Clubhouse. This is about as “cheater” of a dish as you’ll get on our site.

Modify

This is such an easy dish to modify if you have a specific diet you’re following. The base is spinach and carrot, and everything else is just flavour enhancers. If you cannot do mayo use mashed avocado instead. Get creative and please let us know your and your guest’s thoughts!

Ingredients
  

  • 1 cup spinach chopped
  • 1 cup carrot grated small
  • ½ cup red onion finely diced
  • ½ cup walnuts chopped
  • ½ cup feta crumbly, goat and/or sheep
  • ½ cup mayo
  • cup mushroom stems chopped
  • cup bacon bits
  • 1 tbsp Clubhouse Vegetable spice mix
  • 1 tsp Dijon mustard
  • Kosher salt and pepper to taste
  • 50 button mushrooms or crackers

Equipment

  • BBQ or oven

Method
 

  1. Chop all ingredients, mix together in a medium sized bowl
  2. Place on top of crackers like Triscuits, bread with an oiled bottom, or stuff mushrooms. Bake at 375°F or place over medium heat in the BBQ for approximately 20 minutes
  3. Immediately enjoy, right away!
